Healthy Potato Salad

Healthy Potato Salad Preparation time: 15 minutes, Serves 4


  • 4 medium boiled potatoes
  • 2 large tomatoes diced
  • 1 small onion chopped fine
  • 1 large chopped pepper
  • 1/2 cup sliced black olives
  • 2 tbsp chopped parsley
  • 2 tbsp chopped fresh mint
  • 1 tbsp chives Juice of one lemon
  • 2 tbsp traditional balsamic vinegar
  • Salt and pepper to taste


1. Peel the boiled potatoes and dice them.

2. Chop and dice all the vegetables then put them all into a large bowl.

3. Put olive oil, balsamic vinegar, chives, salt and pepper into a small jar.

Cover the jar and shake well, next pour dressing on top of the salad.

4. Mix everything together and serve.

Tip: You can add chopped boiled eggs for a filing, tasty, healthy lunch.
