Healthy Potato Salad Preparation time: 15 minutes, Serves 4 Ingredients: 4 medium boiled potatoes 2 large tomatoes diced 1 small onion chopped fine 1 large chopped pepper 1/2 cup sliced black olives 2 tbsp chopped parsley 2 tbsp chopped fresh mint 1 tbsp chives Juice of one lemon 2 tbsp traditional balsamic vinegar Salt and pepper to taste Directions: 1. Peel the boiled potatoes and dice them. 2. Chop and dice all the vegetables then put them all into a large bowl. 3. Put olive oil, balsamic vinegar, chives, salt and pepper into a small jar. Cover the jar and shake well, next pour dressing on top of the salad. 4. Mix everything together and serve. Tip: You can add chopped boiled eggs for a filing, tasty, healthy lunch.
