Creamy Broccoli Soup

5 cups stock

5 cups water

1 cup oatmeal

1 tablespoon dried minced onions

1 pound cubed butternut squash

1 pound broccoli

1 cup cheddar cheese


  1. Put stock, water, oatmeal, and dried onions into the pot and bring to a boil. Turn down the heat and let the pot simmer for 30 minutes until soup thickens.
  2. Add butternut squash and broccoli to the soup, let it simmer until vegetables reach desired tenderness.
  3. Stir in the cheddar cheese; once it is melted in, turn off heat and enjoy.
