Photo courtesy of Fearless Homemaker Lemony Chickpea Salad Preparation time: 10 minutes, Serves 4 Ingredients: 1 can chickpeas 1 medium tomato 2 cloves of garlic, mashed Juice of one lemon 2 tablespoon olive oil 1 teaspoon cumin, optional 2 tablespoons chopped parsley Salt to tasteDirections: Drain chickpea juice from the can and pour chickpeas into a sauce pan then cover chickpeas with water and heat. While chickpeas warm-up, dice the tomatoes, chop the parsley, squeeze the lemon and mash the garlic. In a small bowl mix lemon and cumin. Once chickpeas are warm, drain them again and put them in the serving dish. Next pour lemon mixture over chickpeas. Top with tomatoes, parsley and salt. Finally drizzle olive oil on and enjoy.
