Quinoa Rainbow Salad

Preparation time: 30 minutes, Servings: 4


1 cup quinoa

1 medium tomato chopped

1 medium carrot shredded

½ red onion finely chopped

½ cup chopped pitted black olives

1 yellow pepper chopped

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

2 leaves lettuce for decoration


  1. Start by cooking the quinoa.  Put 2 cups of water and a dash of salt into a sauce pan and turn heat to high.  Once water boils add quinoa cover the pot, and turn heat to medium and let the pot boil for 5 minutes.  Next turn heat to low and let water boil for 10 more minutes until all the water is gone then turn the heat off and let the quinoa sit.
  2. Wash a cut all the vegetables.
  3. In a medium sized bowl, mix all the ingredients (except the lettuce) together.
  4. Put a lettuce leaf in a plate to make a cup, spoon some of the salad into the lettuce boat. Serve and enjoy.
