Quinoa Rainbow Salad Preparation time: 30 minutes, Servings: 4 Ingredients 1 cup quinoa 1 medium tomato chopped 1 medium carrot shredded ½ red onion finely chopped ½ cup chopped pitted black olives 1 yellow pepper chopped 1 tablespoon olive oil 1 tablespoon balsamic vinegar Salt and pepper to taste 2 leaves lettuce for decoration Directions Start by cooking the quinoa. Put 2 cups of water and a dash of salt into a sauce pan and turn heat to high. Once water boils add quinoa cover the pot, and turn heat to medium and let the pot boil for 5 minutes. Next turn heat to low and let water boil for 10 more minutes until all the water is gone then turn the heat off and let the quinoa sit. Wash a cut all the vegetables. In a medium sized bowl, mix all the ingredients (except the lettuce) together. Put a lettuce leaf in a plate to make a cup, spoon some of the salad into the lettuce boat. Serve and enjoy.
