#FlashbackFriday to this delicious #bread from buff.ly/1oIilCn Oat Bread 4 1/2 cups milk – simmered 2½ cups old-fashioned oats 1/2 cup oat bran 1/2 cup packed golden brown sugar 1/4 cup butter, melted 1 Tablespoon instant yeast 6 to 7 cups bread flour 1 Tablespoon salt Combine oats, oat bran, salt, brown sugar, and butter in a very large bowl. Add the hot milk and stir until combined. Let the mixture sit until about 80°F. Combine the yeast with 2 cups of the bread flour and stir into the oat mixture. Continue stirring in the flour one cup at a time until a soft dough forms. Transfer the dough to a well floured surface and knead for about 8 minutes. Cover the dough and let it rest for 1 hour or until doubled in size. The dough should be about 70 degrees F. Knead the dough again for about 2 minutes. Divide the dough into three equal portions and spray your bread pans. Form the three loaves into logs, and seam side down, place them into the bread pans. Brush loaves with water, sprinkle them with oats, and let rise for 1 hour. Bake at 375° for 35 minutes or until golden brown and bottoms sound hollow if tapped. Remove from pans and let cool on a wire rack. Try to wait at least 40 minutes before cutting into a loaf. Store at room temperature or freeze.
