Gluten Free Peanut Butter Cookies

Gluten Free Peanut Butter Cookies Recipe

I am so excited to share the first of many recipes from my friend and Pastry Chef Erin! She will be taking some of our favorite goodies and throwing a healthy twist into the mix. Go follow @erin_martian now! We will be sharing a monthly recipe from her. Enjoy!

Ingredients:

1 cup peanut butter
½ cup light brown sugar
½ cup sugar
1 egg
¼ tsp. salt
1 tsp. vanilla
1 tsp. baking soda
¼ cup of sugar for rolling

Directions:

Mix the peanut butter, brown sugar, and ½ cup of sugar until light and fluffy. Add the remaining ingredients and mix until combined evenly. Use a small ice cream scoop to even sized balls. Then roll the balls in the remaining sugar. Align them on a sheet tray and mark them with a fork in a criss cross pattern. Refrigerate the cookie dough for 20 minutes. Bake at 350 for 12 minutes.

I think at this point it’s been made clear that I love peanut butter. I think most people love peanut butter, and I think it’s a safe to assume that you or someone you know loves peanut butter cookies! This particular peanut butter cookie recipe is free of any type of flour at all, making it of course gluten free. So good news gluten prohibitors… you can once again eat your beloved peanut butter treats! Anyway, I like to under bake these cookies (maybe check at 10 minutes) because I like my cookies really soft, but they are good crunchy as well! What I like about this recipe is that is doesn’t call for one thousand crazy random ingredients. Actually you probably have all of these ingredients on hand already, so make them the next time you want a sweet snack! Add a Hershey Kiss to the center to make one of those peanut butter hat cookie things, which are great for Halloween or holiday parties!
